Calamari Preparation

Clean and Cut Calamari
Rinse the fresh calamari under cold water. Remove the head and the insides, and slice the body into rings approximately 1/2 inch thick.

Coat Calamari
Dip each calamari ring first into the flour mixture, then into the eggs, and finally coat with breadcrumbs. Ensure they are well-coated.

Heat Oil
In a deep pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry Calamari
Fry the coated calamari in batches for about 2-3 minutes or until golden brown. Do not overcrowd the pot. Remove and drain on paper towels.

Add Tomatoes
Pour in the canned crushed tomatoes. Stir to combine.

Season Sauce
Add dried oregano, salt, and black pepper. Let the sauce simmer for about 15-20 minutes, stirring occasionally.

Finish with Basil
Stir in the fresh basil just before serving. Remove from heat.
