Prepare the Potatoes
Wash and peel the potatoes. Cut them into thin strips (about 1/4 inch thick) to form fries.

Soak the Fries
Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch. This helps to achieve crispier fries.

Dry the Fries
Drain the soaked fries and pat them dry with a clean kitchen towel to remove excess moisture.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature.

Fry the Potatoes
Carefully add a batch of fries to the hot oil. Fry in batches for about 4-6 minutes or until golden brown and crispy. Avoid overcrowding the pot.

Remove the fries from the oil and drain them on paper towels. While still hot, sprinkle with salt, black pepper, and paprika to taste.
