    Prepare the Au Jus

    In a saucepan, heat the beef broth over medium heat. Season with salt and black pepper to taste. Let it simmer for about 10 minutes to enhance the flavor.

    Sauté the Roast Beef

    In a skillet, heat the olive oil over medium heat. Add the sliced roast beef and cook until warmed through, about 5 minutes. If desired, you can season with additional salt and pepper.

    Assemble the Sandwich

    Slice the poorboy buns in half. Pile the warm roast beef on the bottom half of each bun. Spread a teaspoon of horseradish on top of the beef to taste, then place the other half of the bun on top.

    Serve

    Serve the sandwiches hot with a small bowl of au jus on the side for dipping.
