Main Components

Method

Preparation

  1. 1

    Prepare the Hush Puppies

In a mixing bowl, combine 1 cup of cornmeal, 1/2 cup of flour, 1 tablespoon of sugar, 1 teaspoon of baking powder, 1/2 teaspoon of salt, and 1/2 cup of chopped green onions. In a separate bowl, whisk together 1 egg and 1/2 cup of buttermilk. Mix the wet ingredients into the dry ingredients until just combined. Heat oil in a deep pan and drop spoonfuls of the batter into the hot oil, frying until golden brown. Remove and drain on paper towels.

  2. 2

    Fry the Green Tomatoes

Slice the green tomatoes into 1/2-inch thick slices. In one bowl, place 1 cup of flour, in another, beat 1 egg with 1/4 cup of milk. In a third bowl, combine 1 cup of cornmeal with salt and pepper. Dip each tomato slice first in flour, then in the egg mixture, and finally coat with cornmeal. Fry in hot oil until crispy and golden on both sides. Drain on paper towels.

  3. 3

    Prepare the Pimento Ricotta

In a bowl, mix together 1 cup of ricotta cheese, 1/4 cup of diced pimentos (drained), 1/4 teaspoon of garlic powder, salt, and pepper to taste. Adjust seasoning and mix until well combined.

  4. 4

    Toast the Bread

Lightly brush 8 slices of bread with olive oil and toast them in a skillet or oven until golden and crispy.

Assembly

  1. 5

    Assemble the Snack Plate

On a large platter, arrange the sliced Edwards of Surry Virginia Ham, buttermilk biscuits, hush puppies, fried green tomatoes, and a jar of Nanny's pickles. Serve the pimento ricotta in a small bowl alongside the hot pepper jelly. Add the toasted slices of bread on the side for dipping.
