Method
Roasted Wild Atlantic Salmon

Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Marinade
In a small bowl, whisk together olive oil, lemon juice, minced garlic, chopped dill, salt, and black pepper.

Marinate the Salmon
Place the salmon fillets in a baking dish and pour the marinade over them. Let them marinate for 15 minutes.

Roast the Salmon
After marinating, place the baking dish in the preheated oven and roast for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Soak the Black-eyed Peas
Rinse and soak the dried black-eyed peas in water for 4 hours or overnight.

Cook the Black-eyed Peas
In a large pot, combine the soaked peas and 4 cups of water. Bring to a boil, then reduce the heat and simmer for about 30 minutes or until peas are tender.

Combine Ingredients
Add the sautéed vegetables, smoked ham hock, salt, and black pepper to the pot with the black-eyed peas. Simmer for an additional 15 minutes.

Serve with Rice
Stir in the cooked white rice. Serve the Hoppin' John warm.
Curried Cauliflower

Prepare the Cauliflower
Cut the cauliflower into florets and set aside.

Heat the Oil
In a large skillet, heat the coconut oil over medium heat.

Sauté the Cauliflower
Add the cauliflower florets to the skillet and sauté for about 5 minutes.

Add Spices
Stir in the curry powder, minced garlic, salt, and black pepper. Cook for another 5-7 minutes, stirring frequently, until the cauliflower is tender.

Garnish and Serve
Garnish with chopped fresh cilantro before serving.
Cucumber and Caper Relish

Add Seasoning
Stir in lemon juice, salt, and black pepper. Mix well.

Chill Before Serving
Let the relish sit in the refrigerator for at least 15 minutes before serving to allow the flavors to meld.
