Method

Chicken Brine

  1. 1

    Prepare the Brine

In a large bowl, combine the pickles, water, salt, sugar, garlic powder, black peppercorns, and dill seeds. Mix well until the salt and sugar dissolve.

  2. 2

    Brine the Chicken

Add the chicken breasts to the brine, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight.

Chicken

  1. 3

    Prepare Dredging Station

Set up a dredging station with three bowls: one with all-purpose flour seasoned with salt and pepper, one with beaten eggs mixed with buttermilk, and one with panko breadcrumbs.

  2. 4

    Dredge the Chicken

Remove the chicken from the brine and pat dry. Dredge each piece in flour, then dip in the egg mixture, and finally coat with panko breadcrumbs.

  3. 5

    Fry the Chicken

In a large skillet, heat vegetable oil over medium-high heat. Fry the chicken until golden brown and cooked through, about 5-7 minutes per side. Remove and drain on paper towels.

Toppings

  1. 6

    Cook the Bacon

In a skillet, cook the bacon slices over medium heat until crispy. Drain on paper towels.

  2. 7

    Prepare Vegetables

Slice the tomato and onion. Rinse the lettuce and pat dry.

Nashville Hot Aioli

  1. 8

    Make the Aioli

In a bowl, combine mayonnaise, hot sauce, smoked paprika, garlic powder, and salt. Mix until smooth and adjust seasoning if necessary.

Fries

  1. 9

    Prepare the Fries

Cut the potatoes into thin strips. Rinse in cold water and pat dry.

  2. 10

    Fry the Fries

In a deep fryer or large pot, heat vegetable oil to 350°F (175°C). Fry the potatoes in batches until golden brown, about 3-5 minutes. Drain on paper towels and sprinkle with salt.

Assembly

  1. 11

    Assemble the Sandwich

On a toasted bun, spread a generous amount of Nashville hot aioli. Layer with crispy chicken, bacon, lettuce, tomato, and onion. Top with the other half of the bun.

  2. 12

    Serve

Serve the crispy chicken sandwich with a side of fries. Enjoy your pickle-brined crispy chicken sammy!
