    Prepare the Steak

    Take the NY Strip steaks out of the refrigerator and let them come to room temperature for about 30 minutes.

    Season the Steak

    Pat the steaks dry with a paper towel. Rub each steak with olive oil. Season both sides generously with kosher salt and black pepper.

    Cook the Steak

    Preheat a grill or grill pan over high heat. Sear the steaks for 4-5 minutes on each side for medium-rare, adjusting time for desired doneness. Remove from heat and let rest for 5 minutes before slicing.

House Fries

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips for fries.

    Fry the Potatoes

    Heat vegetable oil in a large pot or deep fryer to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt while hot.

Grilled Asparagus

    Prepare Asparagus

    Wash the asparagus and trim the woody ends off. Toss them in olive oil, salt, and black pepper.

    Grill the Asparagus

    Place the seasoned asparagus on the grill and cook for 5-7 minutes, turning occasionally, until they are tender and slightly charred.

Smoked Steak Sauce

    Combine Ingredients

    In a small bowl, mix together the ketchup, liquid smoke, Worcestershire sauce, and brown sugar until well combined.

    Serve the smoked steak sauce alongside the grilled NY Strip steak.
