Method
For the Pan Seared Atlantic Salmon

Prepare the Salmon
Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper.

Heat the Oil
In a large skillet, heat olive oil over medium-high heat until shimmering.

Sear the Salmon
Place the salmon fillets skin-side down in the skillet. Sear for about 4-5 minutes without moving them, until the skin is crispy.

For the Hoppin' John

Cook the Black-Eyed Peas
In a pot, cover black-eyed peas with water and bring to a boil. Reduce heat and simmer for 30 minutes or until tender, then drain.

Add Remaining Ingredients
Stir in the cooked black-eyed peas, rice, vegetable broth, bay leaf, thyme, salt, and black pepper.

Simmer
Bring to a boil, then reduce heat to low. Cover and let simmer for 25-30 minutes, until rice is cooked and liquid is absorbed. Remove the bay leaf before serving.
For the Curried Cauliflower

Prepare the Cauliflower
In a large pot, bring water to a boil and blanch the cauliflower florets for 3-4 minutes. Drain and set aside.

Sauté with Coconut Oil
In a skillet, heat coconut oil over medium heat. Add the blanched cauliflower and sauté for 5 minutes.

Add Seasoning
Stir in curry powder, salt, and black pepper. Cook for another 3-4 minutes until the cauliflower is tender.

Garnish
Remove from heat and sprinkle with chopped coriander before serving.
For the Cucumber & Caper Relish

Add Lemon Juice
Drizzle with lemon juice and sprinkle with salt. Mix well to combine.

Chill
Refrigerate for at least 15 minutes before serving to enhance the flavors.
