    Prepare the Ingredients

    Clean the forest mushrooms and slice them. Rinse the fresh spinach and chop it coarsely. Crumble the goat cheese and set aside.

    Cook the Vegetables

    In a skillet, melt 1 tablespoon of butter over medium heat. Add the sliced forest mushrooms and sauté for about 5 minutes until they are tender. Add the chopped spinach and cook for an additional 2-3 minutes until wilted. Season with salt and black pepper. Remove from skillet and set aside.

    Prepare the Egg Mixture

    In a bowl, crack the eggs and whisk them together with a pinch of salt and black pepper until well combined.

    Cook the Omelette

    In the same skillet, melt the remaining tablespoon of butter over medium heat. Pour in the egg mixture and let it cook undisturbed for about 2-3 minutes, or until the edges start to set. Add the sautéed mushroom and spinach mixture evenly over one half of the omelette, and sprinkle crumbled goat cheese on top.

    Finish and Serve

    Using a spatula, fold the omelette in half and let it cook for another minute until the cheese is slightly melted. Slide the omelette onto a plate and serve immediately.

    Prepare the Potatoes

    Wash the potatoes thoroughly and cut them into small cubes (about 1/2 inch).

    Cook the Potatoes

    In a large skillet, heat the olive oil over medium-high heat. Add the cubed potatoes and cook for about 10 minutes, stirring occasionally until they start to brown.

    Add Onions and Seasoning

    Add the diced onion to the skillet and cook for an additional 5 minutes until the onions are translucent. Sprinkle paprika, salt, and black pepper over the potatoes and mix well.

    Finish Cooking

    Continue to cook the home fries for another 5 minutes or until they are crispy and cooked through. Stir occasionally to prevent sticking.

    Serve

    Remove from heat and transfer the home fries to a serving dish. Serve hot alongside the mushroom omelette.
