Method

Preparing Oysters

    Clean the Oysters

    Thoroughly rinse the fresh oysters under cold water to remove any dirt or debris. Use a brush if necessary to scrub the shells.

    Open the Oysters

    Using an oyster knife, carefully shuck the oysters by inserting the knife into the hinge of the shell and twisting to open. Discard the top shell and place the oysters on a serving tray.

    Prepare the Poaching Liquid

    In a saucepan, combine 2 cups of water, 2 tablespoons of lemon juice, and 1 tablespoon of hot sauce. Bring to a gentle simmer over medium heat.

Making the Topping

    Melt the Butter

    In a skillet over medium heat, melt 4 tablespoons of butter. Add 3 minced garlic cloves and sauté for about 1 minute until fragrant.

    Combine Ingredients

    Stir in 1 tablespoon of chopped parsley, 1 cup of bread crumbs, 1 teaspoon of Old Bay seasoning, 1 teaspoon of salt, and 1 teaspoon of black pepper. Mix well to combine all the ingredients.

Cooking Oysters

    Poach the Oysters

    Carefully place the shucked oysters into the simmering poaching liquid. Cook for 2-3 minutes until the edges of the oysters begin to curl.

    Add Topping

    Remove the oysters from the poaching liquid and place them back on the tray. Spoon the breadcrumb mixture evenly over each oyster.

    Bake the Oysters

    Preheat the oven to 375°F (190°C). Place the tray of oysters in the oven and bake for 10-12 minutes until the topping is golden brown.

Serving

    Serve Hot

    Remove the oysters from the oven and let them cool slightly. Serve immediately with lemon wedges and extra hot sauce on the side.
