Method

Fritters

  1. 1

    Prepare the Batter

In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, Old Bay seasoning, salt, and black pepper. Mix well.

  2. 2

    Add Wet Ingredients

In another bowl, whisk together the egg and milk. Pour the wet mixture into the dry ingredients and stir until just combined.

  3. 3

    Fold in Crab and Onions

Gently fold in the fresh lump crab meat and chopped green onions into the batter until evenly distributed.

  4. 4

    Heat the Oil

In a large, heavy pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  5. 5

    Fry the Fritters

Using a spoon or small ice cream scoop, drop the batter into the hot oil in batches. Fry for about 3-4 minutes on each side or until golden brown. Remove with a slotted spoon and drain on paper towels.

Old Bayoli

  1. 6

    Mix the Sauce

In a small bowl, whisk together the mayonnaise, Old Bay seasoning, and lemon juice until smooth. Adjust seasoning to taste.

Charred Lemon

  1. 7

    Char the Lemons

Preheat a grill or grill pan over medium-high heat. Slice the lemons in half and place them cut-side down on the grill. Grill for about 3-4 minutes until charred and caramelized.
