Vegetable Hash

    Prepare the Vegetables

    Wash and chop the potatoes, bell peppers, zucchini, carrots, onion, and garlic into small, even pieces.

    Cook the Potatoes

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped potatoes and cook for 8-10 minutes, stirring occasionally, until they start to soften.

    Add Remaining Vegetables

    Add the chopped bell peppers, zucchini, carrots, and onion to the skillet. Season with salt and black pepper. Cook for an additional 5-7 minutes, stirring occasionally, until the vegetables are tender.

    Finish the Hash

    Stir in the minced garlic and cook for another 1-2 minutes until fragrant. Remove from heat and set aside.

Creamed Greens

    Cook the Greens

    In a separate saucepan, add the collard greens or spinach and a splash of water. Cover and cook over medium heat for about 5 minutes until wilted.

    Make the Cream Sauce

    Add the heavy cream, nutmeg, salt, and black pepper to the saucepan with the greens. Stir well and simmer for 3-5 minutes until the cream thickens slightly.

    Fry the Eggs

    In a small frying pan, melt the butter over medium-low heat. Crack the eggs into the pan and cook until the whites are set and the yolks are still runny, about 3-4 minutes.
