Main Ingredients

Method

Preparing the Rockfish

  1. 1

    Marinate the Rockfish

In a bowl, combine lemon juice, minced garlic, salt, and black pepper. Place the local rockfish fillets in the marinade, ensuring they are well coated. Let them marinate for 20 minutes.

  2. 2

    Cook the Rockfish

Heat 2 tablespoons of olive oil and 2 tablespoons of butter in a large skillet over medium heat. Once hot, add the marinated rockfish fillets and cook for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

  3. 3

    Add Fresh Parsley

In the last minute of cooking, sprinkle the chopped fresh parsley over the rockfish for added flavor.

Preparing the Sides

  1. 4

    Prepare the Baby Potatoes

In a pot, add the halved baby potatoes and cover with water. Add 1 teaspoon of salt and bring to a boil. Cook for about 15 minutes or until tender; drain and set aside.

  2. 5

    Grill the Corn

While the potatoes are cooking, preheat the grill. Place the corn on the cob directly on the grill and cook for about 10-12 minutes, turning occasionally, until the kernels are tender and slightly charred.

  3. 6

    Sauté the Asparagus

In a separate skillet, heat 2 tablespoons of olive oil over medium heat. Add the trimmed asparagus, salt, and black pepper. Sauté for about 5-7 minutes or until tender-crisp.
