Fish Preparation

    Prepare the Rockfish

    Rinse the rockfish fillets under cold water and pat them dry with paper towels.

    Season the Fillets

    In a bowl, mix together olive oil, salt, black pepper, lemon juice, minced garlic, and Old Bay seasoning. Brush the mixture onto the rockfish fillets generously.

Cooking the Fish

    Heat the Pan

    Heat a non-stick skillet over medium-high heat, adding a little extra olive oil if necessary.

    Cook the Rockfish

    Place the seasoned rockfish fillets in the skillet skin-side down. Cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork and is cooked through.

Side Dish Preparation

    Prepare the Asparagus

    In the same skillet, after removing the fish, add the asparagus and sauté for about 4-5 minutes until tender but still crisp.

    Add Tomatoes and Feta

    Add the halved cherry tomatoes and crumbled feta to the skillet with asparagus, and cook for an additional 2-3 minutes until warmed through.

Serving

    Plate the Dish

    On a plate, serve the rockfish fillet alongside the sautéed asparagus and tomatoes topped with feta. Garnish with fresh parsley.
