Preparation of Vegetables

    Remove the outer leaves of the green cabbage, cut it in half, and then shred it into thin strips. Measure out 4 cups.

    Remove the stems from the kale leaves, chop the leaves into bite-sized pieces, and measure out 2 cups.

    Peel and grate the carrots using a box grater or food processor until you have 1 cup of grated carrots.

    Remove the seeds and stem from the red bell pepper, chop it into small pieces, and set aside.
