Sauté and Braise
In a large pot, heat 1 tablespoon of olive oil over medium heat. Add chopped onion and sauté until translucent. Add minced garlic and red pepper flakes, cooking for an additional minute. Stir in the collard greens and chicken broth. Bring to a boil, then reduce heat to low and simmer for 30-40 minutes until greens are tender.
Apple Glaze

Make the Glaze
In a small saucepan, combine apple juice, brown sugar, and apple cider vinegar. Bring to a simmer over medium heat and cook until the mixture reduces by half and thickens slightly, about 10-15 minutes. Set aside.
Crispy Shallots

Fry Shallots
Thinly slice the shallots and dust them with flour. In a deep skillet, heat vegetable oil over medium heat. Fry the shallots in batches until golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels. Season with salt.
