Fried Chicken

Marinate Chicken
In a large bowl, combine buttermilk, garlic powder, onion powder, paprika, salt, and black pepper. Add chicken pieces and coat well. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

Prepare for Frying
Remove chicken from the marinade and let excess buttermilk drip off. In a shallow dish, place all-purpose flour and season with salt and pepper. Dredge each piece of chicken in the flour, shaking off any excess.

Fry the Chicken
In a large heavy-bottomed pot or deep fryer, heat vegetable oil to 350°F (175°C). Carefully add chicken pieces to the hot oil, frying in batches if necessary. Fry for about 10-15 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Mash Potatoes
Drain potatoes and return them to the pot. Add garlic cloves (peeled and minced), butter, and milk. Mash until smooth and creamy. Season with additional salt and black pepper to taste.

Cook Peas
In a small saucepan over medium heat, melt the butter. Add frozen peas and salt. Cook, stirring occasionally, until peas are heated through, about 5 minutes.
Honey Biscuit

Prepare Dough
Preheat the oven to 425°F (220°C). In a large bowl, combine all-purpose flour, baking powder, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in honey and milk until just combined.

Bake Biscuits
Turn the dough onto a floured surface and knead gently. Roll out to about 1-inch thickness and cut into rounds. Place on a baking sheet and bake for 12-15 minutes until golden brown.
Thyme Gravy

Add Broth and Season
Gradually whisk in chicken broth, stirring constantly to avoid lumps. Add fresh thyme, salt, and black pepper. Bring to a simmer and cook until thickened, about 5 minutes.
