Fruit & Yogurt Parfait Recipe

Method

    Preheat the oven

    Preheat your oven to 350°F (175°C).

    Mix dry ingredients

    In a large bowl, combine rolled oats, chopped almonds, coconut flakes, cinnamon, and salt.

    Combine wet ingredients

    In a separate bowl, mix honey and olive oil.

    Combine all ingredients

    Pour the wet mixture into the dry mixture and stir until well combined.

    Spread on baking sheet

    Spread the granola mixture evenly onto a baking sheet lined with parchment paper.

    Bake

    Bake in the preheated oven for about 20-25 minutes, stirring halfway through until golden brown.

    Cool

    Remove from the oven and let cool completely before using.

Jam

    Prepare the berries

    Wash the fresh berries and place them in a saucepan.

    Cook the berries

    Add sugar and lemon juice to the berries in the saucepan. Cook over medium heat until the berries break down and the mixture thickens, about 10-15 minutes.

    Cool the jam

    Remove from heat and let cool. The jam will thicken further as it cools.

Yogurt and Assembly

    Prepare the yogurt

    In serving glasses or bowls, add a layer of Greek yogurt at the bottom.

    Add granola

    Top the yogurt layer with a generous serving of homemade granola.

    Add jam

    Spoon a layer of the prepared jam over the granola.

    Add fresh fruit

    Add a layer of fresh fruit on top of the jam.

    Repeat layers

    Repeat the layers of yogurt, granola, jam, and fresh fruit until the glasses are full.

    Serve

    Serve immediately or refrigerate for up to an hour before serving.
