Prepare the Tomatoes
Slice the green tomatoes into 1/2-inch thick rounds. Sprinkle both sides with salt and let them sit for about 10-15 minutes to draw out excess moisture.

Set Up Breading Station
In a shallow dish, place the flour. In a second dish, whisk together the eggs and buttermilk. In a third dish, combine the cornmeal, cayenne pepper, black pepper, and additional salt.

Fry the Tomatoes
Heat the vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the breaded tomato slices in batches, frying for about 3-4 minutes per side or until golden brown. Remove and drain on paper towels.
Pimento Ricotta

Mix the Ingredients
In a medium bowl, combine the ricotta cheese, cream cheese, diced pimentos, garlic powder, salt, and black pepper. Mix until well blended and creamy.
Assembly

Assemble the Stack
On a serving plate, place one fried green tomato slice. Spread a generous layer of pimento ricotta on top, then add another tomato slice. Repeat the layers, finishing with a final tomato slice on top.

Drizzle with Jelly
Top the final tomato slice with the hot pepper jelly. Serve immediately while warm.
