Fried Green Tomatoes

    Prepare the Tomatoes

    Slice the green tomatoes into 1/4 inch thick slices and season with salt and black pepper. Let them sit for about 10 minutes to draw out moisture.

    Setup Dredging Station

    In one bowl, place the all-purpose flour. In a second bowl, pour the buttermilk. In a third bowl, mix the cornmeal, cayenne pepper, salt, and black pepper.

    Dredge the Tomatoes

    Coat each tomato slice in flour, then dip in buttermilk, and finally coat with the cornmeal mixture. Make sure each slice is fully covered.

    Fry the Tomatoes

    In a large skillet, heat the vegetable oil over medium-high heat. Fry the coated tomato slices in batches for about 3-4 minutes on each side until golden brown. Remove from oil and drain on paper towels.

Pimento Ricotta

    Combine Ingredients

    In a mixing bowl, combine ricotta cheese, softened cream cheese, chopped pimento peppers, garlic powder, salt, and black pepper.

    Mix Well

    Using a hand mixer or fork, blend the ingredients until smooth and creamy. Adjust seasoning with salt and pepper to taste.

Assembly

    Layer the Stack

    On a serving plate, stack one fried green tomato slice, then spread a layer of pimento ricotta on top, followed by another slice of fried green tomato. Repeat this process until all tomatoes and ricotta are used.

    Top with Jelly

    Finish the stack with a generous dollop of hot pepper jelly on top. Serve immediately.
