Method
Soup Preparation
- 1
- 2
Add Flour
Sprinkle the all-purpose flour over the sautéed vegetables, stirring constantly for about 2 minutes to create a roux. This will help thicken the soup.
- 3
Pour in Broth
Gradually whisk in the chicken broth, ensuring there are no lumps. Increase the heat to medium-high and bring the mixture to a gentle boil.
- 4
Add Crab and Seasonings
Once boiling, reduce the heat to low and stir in the lump crab meat, heavy cream, dried thyme, salt, and black pepper. Allow the soup to simmer for about 15-20 minutes, stirring occasionally.
Crouton Preparation
- 5
Prepare the Croutons
Preheat the oven to 375°F (190°C). In a mixing bowl, combine the cubed bread, olive oil, thyme, and salt. Toss until the bread is evenly coated.
- 6
Bake the Croutons
Spread the seasoned bread cubes in a single layer on a baking sheet. Bake in the preheated oven for about 10-15 minutes, or until golden brown and crispy, tossing halfway through for even browning.
Serving the Soup
- 7
Serve the Soup
Ladle the creamy crab soup into bowls and top each serving with a handful of thyme croutons. Enjoy warm!
