Method

Preparing the Oysters

    Shucking the Oysters

    Carefully shuck the oysters using an oyster knife. Ensure to clean the oysters under cold water to remove any sand or debris.

    Plating the Oysters

    Place the shucked oysters on a bed of crushed ice on a serving platter.

Making the Cocktail Sauce

    Combine Ingredients

    In a medium bowl, mix together the ketchup, horseradish, Worcestershire sauce, lemon juice, and salt. Adjust seasoning to taste.

Preparing the Green Tomato Mignonette

    Mix the Mignonette

    In a small bowl, combine the diced green tomatoes, red onion, red wine vinegar, olive oil, salt, and pepper. Stir to combine and let sit for at least 10 minutes to allow the flavors to meld.

Charred Lemon

    Preheat a grill or grill pan over medium-high heat. Place the halved lemon cut-side down on the grill and cook for about 2-3 minutes until charred. Remove from heat.
