Charleston Shrimp & Grits Recipe

Grits Preparation

    Cook the Grits

    In a large saucepan, bring 4 cups of water to a boil. Add 1 cup of stone milled grits and 1 tsp of salt. Stir well, reduce the heat to low, and cover. Cook for about 20-25 minutes, stirring occasionally until thickened.

    Finish the Grits

    Once the grits are cooked, remove from heat and stir in 2 tbsp of butter and 1 cup of shredded cheddar cheese until melted and creamy. Set aside and keep warm.

Shrimp Preparation

    Sauté the Vegetables

    In a large skillet, heat 2 tbsp of olive oil over medium heat. Add 1 diced onion, 1 cup of diced green bell pepper, and 1 cup of diced red bell pepper. Cook for about 5 minutes until softened.

    Cook the Shrimp

    Add 1 lb of peeled and deveined large shrimp to the skillet. Sprinkle 2 tbsp of Gullah spice blend and 3 minced garlic cloves over the shrimp. Cook for about 3-4 minutes, stirring frequently, until the shrimp turn pink and opaque.

Lobster Sauce Preparation

    Make the Sauce

    In a separate saucepan, combine 2 cups of lobster stock and bring to a simmer. Reduce the heat and stir in 1 cup of heavy cream and 2 tbsp of butter. Season with salt and pepper to taste. Cook for about 5-7 minutes until the sauce thickens slightly.

    Combine and Serve

    To serve, spoon the creamy grits onto plates, top with the sautéed shrimp and vegetables, and drizzle with the lobster sauce. Enjoy your Charleston Shrimp & Grits!
