Method

Prepare the Ingredients

    Cook the Bacon

    In a large skillet over medium heat, cook the bacon until crispy, about 5-7 minutes. Remove from the skillet and drain on paper towels. Once cooled, chop into bite-sized pieces.

    Chop the Green Onions

    While the bacon is cooking, wash and finely chop the green onions, separating the green and white parts.

    Prepare the Home Fries

    If not pre-made, prepare home fries by dicing potatoes and frying them in a separate skillet until golden and crispy, about 10-15 minutes. Season with salt and pepper to taste.

Cook the Eggs

    Scramble the Eggs

    In a bowl, whisk together the eggs and season with salt and pepper. In the skillet used for bacon (with some rendered fat still in it), pour the eggs and cook over medium-low heat, stirring gently until they are just set, about 3-4 minutes.

    Add the Cheese and Bacon

    Once the eggs are almost cooked, add the chopped bacon, shredded pepperjack cheese, and the white parts of the green onions. Stir gently until the cheese melts and everything is combined.

Assemble the Dish

    Warm the Tortillas

    In a dry skillet, warm the flour tortillas over medium heat for about 30 seconds on each side until pliable.

    Build the Miga

    On each tortilla, spoon a generous amount of the scrambled egg mixture. Top with the green parts of the green onions, and a few spoonfuls of salsa verde.

    Serve with Home Fries

    On the side, serve the home fries. Enjoy your Breakfast Miga while it's warm!
