    Prepare the Potatoes

    Peel and dice the russet potatoes into small cubes.

    Cook the Potatoes

    In a large skillet, heat olive oil over medium heat. Add the diced potatoes and cook for about 10 minutes, stirring occasionally, until they are golden brown and tender.

    Add Vegetables

    Add the diced onion and bell pepper to the skillet. Season with salt, black pepper, and paprika. Cook for an additional 5-7 minutes, stirring occasionally, until the onion and bell pepper are soft.

    Whisk the Eggs

    In a bowl, whisk together the eggs and milk until well combined.

    Cook the Eggs

    In a separate skillet, scramble the egg mixture over medium heat until fully cooked, approximately 5 minutes.

    Assemble the Burritos

    Lay out a tortilla on a flat surface. In the center of each tortilla, add a portion of the potato hash, scrambled eggs, shredded cheddar cheese, a spoonful of salsa, and chopped cilantro.

    Fold the sides of the tortilla over the filling, then roll it up from the bottom. Ensure the filling is secured inside.
