Method

Biscuit

  1. 1

    Prepare the Biscuit Dough

In a large bowl, combine all-purpose flour, baking powder, and salt. Mix well.

  2. 2

    Cut in the Butter

Add the unsalted butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

  3. 3

    Add Milk

Pour in the milk and stir until just combined. Do not overmix.

  4. 4

    Shape and Bake

Turn the dough out onto a floured surface, knead gently, and roll to about 1-inch thickness. Cut out biscuits with a round cutter and place on a baking sheet. Bake in a preheated oven at 425°F (220°C) for 12-15 minutes until golden brown.

Seasonal Muffins

  1. 5

    Mix Dry Ingredients

In a medium bowl, combine all-purpose flour, granulated sugar, baking powder, and salt. Whisk together.

  2. 6

    Mix Wet Ingredients

In a separate bowl, beat the eggs and then add milk and vegetable oil. Mix until well combined.

  3. 7

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the seasonal fruit.

  4. 8

    Bake Muffins

Divide the batter into a greased or lined muffin tin. Bake in a preheated oven at 375°F (190°C) for 18-20 minutes or until a toothpick inserted in the center comes out clean.

Fruit

  1. 9

    Prepare the Fresh Fruit

Wash and cut the assorted fresh fruit into bite-sized pieces. Arrange on a serving platter.

Jam

  1. 10

    Serve the Jam

Spoon the fruit jam into a small bowl for serving alongside the biscuits and muffins.

Greek Yogurt

  1. 11

    Serve the Greek Yogurt

Spoon the Greek yogurt into a serving bowl and set it next to the fruit and jam.
