    Roast the Duck

    Preheat the oven to 375°F (190°C). Season the duck legs with salt and pepper, then rub with olive oil. Place the duck legs in a roasting pan and roast for 1.5 to 2 hours until the skin is crispy and the meat is tender.

    Prepare the Relish

    In a bowl, combine diced mango, black beans, chopped cilantro, and lime juice. Add chipotle in adobo sauce and mix well. Adjust seasoning with salt and pepper to taste.

    Make the Guava Dipping Sauce

    In a small saucepan, heat the guava paste with a splash of water over low heat, stirring until smooth. If desired, add more lime juice for acidity.

    Pull the Duck

    Once the duck is done roasting, let it rest for 10 minutes. Shred the meat using two forks, discarding the bones and excess fat.

    Assemble the Tacos

    Warm the soft taco shells. Fill each taco with pulled duck, a generous spoonful of the mango and black beans relish, and garnish with additional cilantro if desired.

    Serve the tacos warm with guava dipping sauce on the side for drizzling or dipping.
