    Prepare the Mixture

    In a large mixing bowl, mash the black beans until mostly smooth. Stir in the oats, grated carrot, chopped bell pepper, chopped onion, minced garlic, cumin, paprika, salt, and black pepper. Mix well.

    Binding the Burger

    Add the egg (or flax egg for a vegan option) to the mixture and combine until well incorporated.

    Form Patties

    Divide the mixture into 4 equal portions and form into patties.

    Cook the Patties

    In a skillet, heat the olive oil over medium heat. Cook the patties for 5-6 minutes on each side, or until golden brown.

    Add Cheese and Chiles

    If using cheese, place a slice on each patty in the last minute of cooking to allow it to melt. You can also top the patties with green chiles if desired.

    Assemble Burgers

    Place each veggie patty on a burger bun and add your favorite toppings. Serve with your choice of French fries, potato salad, or cole slaw.
