    Prepare the Peppers

    Roast the poblano peppers over an open flame or in the oven until the skin is charred and blistered. Place them in a plastic bag for 10 minutes to steam. Peel the skin off and remove the seeds.

    Make the Filling

    In a bowl, mix the shredded pork with the cheddar cheese. Stuff each pepper with the pork and cheese mixture.

    Prepare the Batter

    In another bowl, beat the eggs until frothy. In a separate bowl, combine flour, milk, salt, and black pepper. Gradually fold the beaten eggs into the flour mixture until well combined.

    Fry the Rellenos

    Heat the vegetable oil in a deep skillet over medium heat. Dip each stuffed pepper into the batter, then carefully place them in the hot oil. Fry until golden brown on all sides, about 5-6 minutes.

    Drain and Serve

    Remove the fried chile rellenos and place them on paper towels to drain excess oil. Serve hot, topped with your choice of salsa or sauce.
