    Prepare Milk Mixture

    In a saucepan, combine the whole milk, sugar, and the cinnamon stick. Heat over medium heat until the mixture is warm but not boiling.

    Mix Egg Yolks

    In a bowl, whisk together the egg yolks, cornstarch, and a pinch of salt until smooth.

    Combine Mixtures

    Once the milk mixture is warm, gradually pour about a cup of it into the egg yolk mixture, whisking constantly to temper the yolks.

    Thicken the Pudding

    Pour the tempered egg yolk mixture back into the saucepan with the remaining milk mixture. Cook over medium-low heat, stirring continuously until the mixture thickens and coats the back of a spoon.

    Add Vanilla

    Remove from heat and stir in the vanilla extract. Discard the cinnamon stick.

    Chill and Serve

    Pour the natillas into serving dishes and let cool to room temperature, then refrigerate for at least 2 hours before serving.
