    Prepare the Papitas

    In a large skillet, heat olive oil over medium heat. Add diced papitas and season with salt and pepper. Cook, stirring occasionally, until golden brown and crispy, about 15-20 minutes. Remove from heat and set aside.

    Cook the Bacon

    In the same skillet, cook the bacon until crispy. Remove from skillet and let drain on paper towels. Crumble the bacon into small pieces.

    Cook the Eggs

    In the same skillet, cook the eggs to your preference (fried, scrambled, etc.). Season with salt and pepper.

    Assemble the Pile

    On a large plate, create a mound with the papitas. Top with the cooked eggs, then sprinkle the crumbled bacon over the eggs. Pour the green chile sauce generously over the bacon and eggs, and finally sprinkle cheddar cheese on top.

    Melt the Cheese

    You can briefly place the assembled pile under a broiler for a minute to melt the cheese if desired.
