Prepare the Tamale
In a large bowl, mix masa harina with warm water, spices, and the ground beef or chicken. Form into a tamale shape and wrap in corn husks. Steam for approximately 1 hour until cooked through.

Make the Chile Relleno
Roast the poblano peppers until charred, then peel and stuff with cheese. Dip in batter and fry until golden brown.

Prepare the Cheese Enchilada
Heat vegetable oil in a pan, sauté onions, garlic, and bell pepper until softened. Dip corn tortillas in the sauce, fill them with cheddar cheese, roll them up, and place in a baking dish. Top with remaining sauce and additional cheese, then bake at 350°F (175°C) for 20 minutes.

Assembly
On a plate, arrange the tamale, chile relleno, and cheese enchilada. Serve with red or green chile sauce drizzled on top.
