Cheesecake Preparation

Prepare the Crust
In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated with butter. Press the mixture firmly into the bottom of a 9-inch springform pan.

Bake the Crust
Preheat the oven to 350°F (175°C). Bake the crust for 10 minutes, then remove from the oven and set aside to cool.

Make the Cheesecake Filling
In a large mixing bowl, beat together the cream cheese and granulated sugar until smooth and creamy. Add the sour cream, vanilla extract, and lemon juice. Mix until fully combined.

Add Eggs
Add the eggs one at a time, mixing on low speed until just combined. Be careful not to overmix.

Pour Filling into Crust
Pour the cheesecake filling into the cooled crust, smoothing the top with a spatula.

Bake the Cheesecake
Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour.

Cool and Chill
Remove the cheesecake from the oven and let it cool completely at room temperature. Once cooled, refrigerate for at least 4 hours or overnight before serving.
