Prepare the Marinade
In a large bowl, combine the red chile powder, minced garlic, ground cumin, oregano, salt, black pepper, apple cider vinegar, and water. Mix well to form a marinade.

Marinate the Pork
Cut the pork shoulder into large chunks and place it in the marinade. Ensure all pieces are well coated. Cover and refrigerate for at least 4 hours, or preferably overnight.

Preheat the Oven
Preheat your oven to 325°F (165°C).

Sear the Pork
In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the marinated pork pieces and sear on all sides until browned.

Add Onions and Bake
Add the sliced onion to the skillet with the pork. Pour any remaining marinade over the top. Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven.

Cook
Bake in the oven for about 2 to 2.5 hours, or until the pork is tender and fully cooked. Stir occasionally and add a bit of water if the marinade becomes too thick.

Remove from the oven, let it rest for a few minutes, then serve hot with your choice of sides.
