Method

Preparing the Burrito

  1. 1

    Cook the Bacon or Ham

In a skillet over medium heat, cook the bacon or ham until crispy. Remove and set aside.

  2. 2

    Scramble the Eggs

In the same skillet, crack the eggs and scramble them until fully cooked. Mix in the cooked bacon or ham.

  3. 3

    Assemble the Burrito

Lay the scrambled eggs and meat mixture onto the flour tortilla, sprinkle with cheddar cheese, and drizzle with red or green chile sauce. Roll the tortilla tightly to enclose the filling.

Cooking the Papitas

  1. 4

    Prepare the Potatoes

Dice the potatoes into small cubes. In the same skillet, add olive oil and heat over medium-high heat.

  2. 5

    Cook the Papitas

Add the diced potatoes to the skillet, season with salt and pepper, and cook until golden brown and crispy, about 10-15 minutes.

Serving

  1. 6

    Serve the Burrito

Serve the burrito hot, topped with additional chile sauce if desired, alongside the crispy papitas.
