    Make dough

    Combine 1.25 cups all-purpose flour, 0.25 tsp salt and 0.5 tsp granulated sugar in a bowl. Cut in 5 tablespoons cold, cubed unsalted butter using a pastry cutter or two forks until mixture resembles coarse crumbs with some pea-sized pieces.

    Add ice water

    Drizzle 3 tablespoons ice water over the flour-butter mixture one tablespoon at a time, gently tossing with a fork after each addition. Add only enough to just bring the dough together when pinched (you may not need the entire amount).

    Form and chill

    Gather dough into a disc, wrap in plastic, and refrigerate at least 30 minutes (can chill up to 2 days).

    Roll and blind bake (optional partial bake)

    Preheat oven to 375°F (190°C). On a lightly floured surface, roll chilled dough to a 12-inch circle. Fit into a 9-inch (23 cm) pie dish, trim and crimp edges. Line crust with parchment and fill with pie weights or dried beans. Blind-bake for 12 minutes, remove weights and parchment, brush interior lightly with beaten egg (optional to seal), and bake 5–7 more minutes until just set but not browned. Remove from oven and reduce oven temperature to 350°F (175°C).

Pecan filling

    Prep pecans

    If you prefer a decorative top, reserve 12–16 whole pecan halves for arranging on top of the pie. Roughly chop the remaining pecans if you want smaller pieces; otherwise use whole halves throughout.

    Whisk filling

    In a medium bowl, whisk 3 large eggs until blended. Whisk in 1 cup light corn syrup, 0.5 cup packed dark brown sugar, 2 tablespoons melted unsalted butter, 1 teaspoon vanilla extract, and 0.25 teaspoon salt until smooth and fully combined.

    Assemble pie

    Scatter 1.5 cups pecan halves evenly over the pre-baked (or unbaked, if you skipped blind-baking) pie crust. Pour the filling mixture over the pecans, using the back of a spoon to gently distribute nuts if needed. If desired, arrange reserved whole pecans on top in a pattern.

    Bake

    Bake at 350°F (175°C) for 45–55 minutes, or until the filling is set at the edges but slightly jiggly in the center (it will continue to set as it cools). If the crust or pecans are browning too much, tent the pie loosely with foil after 30 minutes.

    Cool

    Remove pie from oven and place on a wire rack. Cool at least 2 hours at room temperature to allow the filling to firm up before slicing. For best slicing, chill 3–4 hours or overnight.

    Egg wash and glaze (optional)

    Whisk 1 egg with 1 teaspoon cold water and brush lightly along the crust edge before baking for a glossy finish. Sprinkle 1 teaspoon coarse sugar on the crust edge if desired before baking.

    Slice and serve at room temperature or slightly chilled. Serve with whipped cream or vanilla ice cream if desired.
