Prepare chicken
Trim any fat from the chicken breasts and cut into 3/4- to 1-inch thick strips (finger shape). If using tenders, leave whole or halve for smaller pieces.

Marinate
Place the chicken strips in a bowl or zip-top bag with 1/2 cup buttermilk, 1/4 teaspoon salt and 1/4 teaspoon black pepper. Toss to coat and refrigerate for 20–30 minutes (or up to 2 hours) to tenderize and help coating adhere.

Set up breading station
In one shallow bowl combine 1 cup flour, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp smoked paprika and 3/4 tsp salt and 1/4 tsp black pepper. In a second bowl beat the 2 eggs. In a third bowl mix 1 cup panko breadcrumbs with 1/4 cup grated Parmesan.

Bread the chicken
Remove chicken from buttermilk, let excess drip off, dredge first in the seasoned flour (shake off excess), then dip in beaten eggs, then press into the panko-Parmesan mixture until well coated. Place coated fingers on a wire rack set over a sheet pan. For extra-crisp double-dip: return to egg then panko for a second coating.

Heat oil
Pour 1.5–2 cups vegetable oil into a deep skillet or Dutch oven to a depth of about 1–1.5 inches. Heat over medium-high until oil registers 350°F (175°C) or a small breadcrumb sizzles immediately on contact.

Alternative: Bake
Preheat oven to 425°F (220°C). Lightly spray a baking sheet with oil and arrange coated fingers in a single layer. Spray tops with oil. Bake 12–15 minutes, flip once halfway, until golden and internal temp 165°F (74°C).

Optional toss with cornstarch
If using cornstarch for extra crispness, toss the dried potato pieces with 1 tsp cornstarch until lightly coated.

Fry method
Heat oil in a deep pot to 325°F (160°C). Fry potatoes in batches for 3–4 minutes just until tender but not browned. Remove and drain. Increase oil temperature to 375°F (190°C) and fry again in batches 1–2 minutes until golden and crispy. Drain on paper towels and season immediately with 3/4 tsp salt and 1/4 tsp black pepper.

Oven method
Preheat oven to 425°F (220°C). Toss dried potatoes with 2 tbsp oil, spread in a single layer on a rimmed baking sheet, and bake 20–30 minutes, flipping once, until golden and crisp. Season with salt and pepper.
Sauces (Ranch, Honey Mustard, Chris' Sauce)

Ranch (served ready-made)
If using prepared ranch dressing, transfer 1/2 cup to a small serving ramekin and chill until serving.

Honey Mustard
Whisk together 2 tbsp honey and 2 tsp Dijon mustard with 1 tbsp mayonnaise if you prefer creamier texture. Taste and adjust sweetness or tang. Transfer to a ramekin.

Chris' Sauce (creamy tangy sauce)
Combine 1/4 cup mayonnaise, 2 tbsp ketchup, 1 tsp hot sauce, and 1/2 tsp Worcestershire sauce. Whisk until smooth; chill briefly to let flavors meld. Adjust hot sauce to taste.
