    Prepare bread and cheese

    Lay out four slices of white bread on a clean work surface. If using cheddar block, slice or shred enough to equal about 3 oz. Place 1.5 oz cheddar (or a generous handful of shredded cheddar) on two slices of bread, then top each with half a slice of American cheese to promote extra melt and creaminess. Optionally sprinkle a light pinch (about 1/8–1/4 tsp) of black pepper and 1/8 tsp garlic powder over the cheese for mild seasoning.

    Assemble sandwiches

    If using mayonnaise, spread about 1/2 tsp on the outer face of each top slice of bread (this helps browning and gives a slightly tangy crust). Place the plain side of the top bread slices onto the cheese to form two assembled sandwiches.

    Butter the bread

    Spread about 1 tablespoon of unsalted butter evenly over the outer face of each sandwich (the side that will contact the skillet). Make sure butter is room temperature or softened for easy spreading; you can also melt the butter and brush it on if preferred.

    Heat skillet

    Place a heavy skillet or nonstick pan over medium-low to medium heat and allow it to warm for 1–2 minutes. The moderate temperature ensures the bread browns slowly while the cheese melts fully without burning.

    Grill first side

    Place the sandwiches, buttered-side down, in the preheated skillet. Cook undisturbed for 3–4 minutes, checking after 2.5–3 minutes. When the bread is golden brown and firm, proceed to flip. If the bread is browning too quickly before cheese melts, reduce heat slightly and cover the pan for 30–60 seconds to trap heat.

    Flip and finish

    Carefully flip each sandwich using a spatula. Immediately butter the new top side with the remaining 1 tablespoon of butter. Cook the second side for another 3–4 minutes, again covering for short periods if needed, until golden brown and the cheese is fully melted and gooey (test by gently pressing with spatula—cheese should flow slightly).

    Rest and slice

    Transfer sandwiches to a cutting board and let rest for 1 minute (this keeps melted cheese from running out). Using a sharp knife or sandwich cutter, slice each sandwich diagonally or in half, as desired.

    Serve immediately while hot and gooey. Optional accompaniments: tomato soup, pickles, or potato chips.
