Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C) and grease four ramekins with butter. Place them on a baking tray.

  2. 2

    Melt Chocolate and Butter

In a medium microwave-safe bowl, combine the bittersweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring until completely melted and smooth.

  3. 3

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar, large eggs, and large egg yolks until well combined and slightly frothy.

  4. 4

    Combine Mixtures

Gradually add the melted chocolate mixture to the egg mixture, stirring continuously to prevent the eggs from cooking.

  5. 5

    Add Dry Ingredients

Sift in the all-purpose flour, vanilla extract, and a pinch of salt. Gently fold the mixture until just combined, ensuring not to overmix.

  6. 6

    Pour into Ramekins

Evenly divide the batter into the prepared ramekins, filling each about 3/4 full.

Baking

  1. 7

    Bake the Cakes

Bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is still soft. The tops should be slightly puffed.

  2. 8

    Rest the Cakes

Remove the cakes from the oven and let them rest for 1 minute before inverting them onto individual plates.

Serving

  1. 9

    Serve with Toppings

Dust the tops of the lava cakes with powdered sugar and serve immediately with a scoop of vanilla ice cream on the side.
