Prepare the couscous

In a medium saucepan, bring the vegetable broth to a boil. Once boiling, stir in the couscous, cover, and remove from heat. Let it sit for about 5 minutes or until the broth is fully absorbed.

While the couscous is cooking, dice the bell pepper, zucchini, and red onion. Shred the carrot and halve the cherry tomatoes. Chop the fresh parsley.
