Method

Preparing the Ahi Tuna

Seasoning the Tuna

Pat the Ahi Tuna dry with paper towels. Season both sides with salt and black pepper.

Searing the Tuna

Heat the olive oil in a skillet over medium-high heat. Add the seasoned Ahi Tuna and sear for about 1-2 minutes on each side, until the outside is golden and the inside is rare to medium-rare. Remove from the heat and let it rest for a few minutes before slicing.

Mixing the Aioli

In a small bowl, combine the mayonnaise, Sriracha sauce, and lime juice. Mix well until fully combined. Adjust the spiciness by adding more Sriracha if desired.

Warming the Tortillas

Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable.

Building the Tacos

Slice the seared Ahi Tuna into thin strips. Place a few strips on each tortilla, drizzle with Sriracha aioli, and top with fresh cilantro and pickled ginger.
