Pork Chop Preparation

Prepare the Pork Chops
Pat the double cut pork chops dry with paper towels. Season both sides generously with salt and black pepper.

Preheat Grill
Soak the pecan wood chips in water for at least 30 minutes. Preheat your grill to medium heat.

Grill the Pork Chops
Brush the pork chops with olive oil. Place the soaked wood chips in a smoker box or wrap in foil and poke holes in it to release smoke. Place the pork chops on the grill and cook for about 6-8 minutes per side, or until the internal temperature reaches 145°F (63°C).

Rest the Chops
Once done, remove the pork chops from the grill and let them rest for 5 minutes before serving.

Add Apples and Spices
Stir in the diced apples, brown sugar, cinnamon, ginger, apple cider vinegar, and salt. Mix well.

Simmer the Chutney
Reduce heat to low and cover the saucepan. Let the mixture simmer for about 20-25 minutes, stirring occasionally until the apples are soft and the mixture thickens.

Cool and Serve
Remove from heat and let the chutney cool slightly before serving alongside the grilled pork chops.
