Prepare the Burger Patty

    Mix the Beef

    In a large bowl, combine the Black Angus Prime Beef, kosher salt, and black pepper. Use your hands to mix gently until just combined, being careful not to overwork the meat.

    Form the Patty

    Divide the mixture into two equal portions and shape each into an 8-ounce patty, making a slight indentation in the center to prevent puffing while cooking.

Cook the Burger

    Preheat the Grill or Pan

    Preheat your grill or a cast-iron skillet over medium-high heat. If using a skillet, add a little oil to prevent sticking.

    Cook the Patties

    Place the burger patties on the hot grill or skillet. Cook for about 4-5 minutes on one side until a crust forms, then flip and cook for an additional 4-5 minutes for medium-rare, or longer for desired doneness.

Add Toppings

    Melt the Créme de Brie

    In the last minute of cooking, place 2 oz of Créme de Brie on each patty to allow it to melt slightly.

    Prepare the Jam

    While the cheese is melting, warm the smoked bacon fig jam in a small saucepan over low heat until it is slightly runny.

Assemble the Burger

    Toast the Buns

    Lightly toast the burger buns on the grill or in a toaster until golden brown.

    Build the Burger

    On the bottom half of each toasted bun, place a handful of fresh arugula, followed by the burger patty with melted Créme de Brie. Top with tomato slices and drizzle with warm smoked bacon fig jam. Finish with the top half of the bun.
