Cook the Pasta

Bring a large pot of salted water to a boil. Add the elbow macaroni to the boiling water and cook according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce

In a large saucepan, melt the unsalted butter over medium heat. Once melted, add the all-purpose flour and whisk continuously for about 1 minute until it forms a roux. Gradually pour in the whole milk while continuing to whisk to avoid lumps. Cook for 3-5 minutes until the mixture thickens.

Add the Cheeses

Reduce the heat to low and stir in the smoked Gouda cheese and sharp cheddar cheese, stirring until melted and smooth. Add the mustard powder, garlic powder, salt, and black pepper to taste. Mix well.

Combine Pasta and Sauce

Add the drained macaroni to the cheese sauce, stirring until the pasta is evenly coated with the sauce.

Prepare the Topping

In a small bowl, mix the panko breadcrumbs with olive oil until well combined. This will create a crispy topping.

Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture to a greased baking dish. Evenly sprinkle the breadcrumb mixture on top. Bake in the preheated oven for 20-25 minutes until the topping is golden brown and the cheese is bubbly.
