Prepare the Marinade
In a mixing bowl, combine olive oil, chopped rosemary, chopped thyme, minced garlic, lemon juice, salt, and black pepper. Whisk together until well blended.
Marinate the Chicken
Place the halved chicken in a large zip-top bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
Preheat the Oven
Preheat your oven to 425°F (220°C).
Roast the Chicken
Remove the chicken from the marinade and place it skin-side up on a roasting pan. Discard the remaining marinade. Roast the chicken in the preheated oven for approximately 45-55 minutes, or until the skin is golden brown and the internal temperature reaches 165°F (75°C).
Rest and Serve
Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving. Serve warm with your choice of sides.
