Vanilla Bean Panna Cotta

Prepare the Gelatin
In a small bowl, sprinkle the gelatin powder over 2 tablespoons of cold water. Let it sit for about 5 minutes until it blooms.

Heat the Cream Mixture
In a saucepan, combine the heavy cream, whole milk, and sugar. Split the vanilla bean and scrape the seeds into the mixture, adding the pod as well. Heat over medium heat until just simmering, stirring occasionally.

Combine Gelatin and Cream
Remove the saucepan from heat. Take out the vanilla pod and stir in the bloomed gelatin until fully dissolved.

Chill the Panna Cotta
Pour the mixture into serving glasses or molds and refrigerate for at least 4 hours or until set.

Cook the Mixture
Bring the mixture to a simmer over medium heat. Cook for about 10 minutes, or until the berries have softened and the sauce thickens slightly.

Strain the Syrup
Strain the mixture through a fine-mesh sieve to remove the seeds and skins. Allow the syrup to cool.
Minted Macerated Berries

Macerate the Berries
In a bowl, combine the mixed berries, sugar, and lemon zest. Gently toss to coat.

Add Mint
Chop the fresh mint leaves and add them to the berry mixture. Let it sit for about 15 minutes to allow the flavors to meld.
