Marinate the Beef
In a large bowl, combine soy sauce, brown sugar, minced garlic, grated ginger, and sesame oil. Add the beef cubes and stir well to coat. Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Prepare the Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Alternate threading the marinated beef and pineapple cubes onto the skewers.

Make the Chimichurri
In a medium bowl, mix together chopped parsley, chopped cilantro, minced garlic, red chili flakes, red wine vinegar, olive oil, salt, and black pepper. Stir until well combined. Let it sit for at least 15 minutes to meld the flavors.
