Preparation of Marinade

    Mix Marinade Ingredients

    In a mixing bowl, combine soy sauce, brown sugar, grated ginger, minced garlic, pineapple juice, sesame oil, lime juice, and red pepper flakes. Whisk until the sugar is fully dissolved and all ingredients are well blended.

    Marinate Chicken

    Place the chicken thighs in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it is fully coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Preparation of Pineapple

    Prepare Pineapple

    Cut the fresh pineapple into thick rings or wedges, about 1 inch thick. Set aside for grilling.

Grilling

    Heat the Grill

    Preheat your grill to medium-high heat (about 400°F or 200°C).

    Grill Chicken

    Remove the chicken from the marinade (discard excess marinade) and place on the grill. Cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

    Grill Pineapple

    While the chicken is grilling, place the pineapple on the grill. Grill for about 3-4 minutes on each side until grill marks appear and the pineapple is caramelized.

Serving

    Plate the Dish

    Once the chicken and pineapple are cooked, remove them from the grill. Serve the grilled chicken alongside the charred pineapple. Optionally, drizzle any leftover marinade (that was not in contact with raw chicken) over the top for added flavor.
