Method

Chicken Breast

    Prepare the Chicken

    Preheat your oven to 375°F (190°C). Season the organic chicken breasts with olive oil, salt, and black pepper on both sides.

    Cook the Chicken

    In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and sear for about 5 minutes on each side until golden brown. Transfer the skillet to the oven and bake for an additional 20-25 minutes, or until the internal temperature reaches 165°F (74°C).

    Prepare the Potatoes

    While the chicken is baking, wash the fingerling potatoes and cut them in half lengthwise. In a bowl, toss the potatoes with olive oil, garlic powder, fresh rosemary, and salt.

    Roast the Potatoes

    Spread the seasoned potatoes on a baking sheet in a single layer. Roast in the same oven as the chicken for about 25-30 minutes, or until crispy and golden, stirring halfway through.

Charred Tomato

    Prepare the Tomatoes

    While the chicken and potatoes are cooking, cut the Roma tomatoes in half and drizzle with olive oil and salt.

    Char the Tomatoes

    Place the tomatoes cut-side down on a hot grill or grill pan. Cook for about 3-4 minutes until charred and softened. Remove from heat and set aside.

Peppercorn Brandy Sauce

    Make the Sauce

    In a saucepan over medium heat, melt the butter and add finely chopped shallots. Sauté for 2-3 minutes until translucent.

    Add the Brandy

    Carefully add the brandy to the pan and allow it to cook until reduced by half, about 5 minutes.

    Finish the Sauce

    Stir in the heavy cream and black peppercorns. Simmer for 5-7 minutes until the sauce thickens slightly. Season with salt to taste.
