Oysters Preparation

Shucking the Oysters
Using an oyster knife, carefully shuck each oyster, discarding the top shell and keeping the oyster in the bottom shell. Place the shucked oysters on a platter.

Serving on Ice
Fill a serving plate with crushed ice and arrange the shucked oysters on top of the ice. This will keep them chilled for serving.
Kiwi Mignonette Preparation

Mixing the Ingredients
In a small bowl, combine the diced kiwi, red wine vinegar, finely chopped shallot, fresh cilantro, and salt. Stir well to mix all the ingredients.

Chill the Sauce
Let the kiwi mignonette sit for at least 15 minutes to allow the flavors to meld together before serving.

Combining the Ingredients
In a medium bowl, whisk together the ketchup, prepared horseradish, Worcestershire sauce, lemon juice, and hot sauce. Mix until smooth.
